Botanicals are the natural ingredients that give gin its flavour, aroma and character. While juniper must always be the dominant botanical for a spirit to be called gin, distillers also use fruits, seeds, roots, herbs, flowers and spices to create a unique recipe. It is this careful balance of botanicals that makes every gin different.

Nature’s Flavour Library

Every botanical is a remarkable product of nature. Each contains naturally occurring aromatic compounds that create the flavours and aromas we experience in gin. Some bring bright citrus notes, others offer warming spice, floral delicacy or earthy depth.

You could think of botanicals as nature’s flavour library. Every plant has its own characteristics, and the distiller’s role is to select and balance those flavours to create a harmonious spirit. When I first started out I photographed all the botanicals on The Quantocks and learnt about their characteristics as plants, I have a Cull peppers Herbal and would look them up to see which star sign they were ruled by.

Juniper Comes First

Juniper is the one botanical that every gin must contain. Its fresh pine, resinous and gently peppery character gives gin its unmistakable identity. Without juniper being the dominant flavour, a spirit cannot legally be described as gin.

Once juniper provides the foundation, other botanicals are chosen to complement it. Coriander seed often contributes gentle citrus and spice, angelica root adds earthy structure, while citrus peel brings freshness and brightness. There are no fixed rules beyond juniper, giving every distiller the freedom to develop their own signature style.

Every Harvest Is Unique

Unlike artificial flavourings, botanicals are natural products. Their flavour can change from year to year depending on rainfall, sunshine, soil conditions and when they are harvested.

This is one of the reasons distilling is both an art and a science. A distiller learns to recognise these subtle differences and adjust recipes where necessary, ensuring the finished gin remains beautifully balanced while respecting the character of the natural ingredients.

Choosing Botanicals with Purpose

At Dryad Gin, every botanical is chosen for a reason. We don’t simply add ingredients because they’re fashionable or unusual. Each one plays a role in creating both flavour and a sense of place.

Our original Dryad Gin combines eleven carefully selected botanicals, including sustainably harvested oak bark, to capture the feeling of walking through an ancient Somerset woodland. Oak bark provides a gentle woodland character that sits alongside juniper, coriander, orange peel and the other botanicals to create a balanced, distinctive gin.

Our Sea Centaur Martini Gin tells a different story. Inspired by the Somerset coastline and the submerged forest of Porlock Bay, it uses fresh samphire and sea buckthorn to create a crisp, coastal style designed for the perfect martini.
